  • Completed step 250ml Greek Style Honey yoghurt (Would also work with Greek Style Ginger)
  • Completed step 2 tbsp fresh lemon juice
  • Completed step ¼ tspground cardamom
  • Completed step 6 firm but ripe plums, about 1kg in total, halved (You could also use nectarines, peaches, or apricots)
  • Completed step Vegetable oil or rapeseed oil
  • Completed step 1 tbsp granulated sugar
  • Completed step 40g pistachios, coarsely chopped

Method:
  • Whisk the Rachel’s Greek Style Honey yoghurt, lemon juice and cardamom in a small bowl. Refrigerate until ready to use.
  • Prepare the barbecue for grilling (direct method) at a medium heat (180-230°C).
  • Lightly brush the cut side of each plum with oil. Brush the cooking grates clean. Barbecue the plum halves, cut side down first, over medium heat for about three minutes, until slightly charred and grill marks appear. Turn the plums over, sprinkle evenly with the sugar, and continue cooking for three more minutes.
  • Place two plum halves in each of six cups or bowls. Spoon the honey yoghurt over the plums. Sprinkle the pistachios on top to serve.
