Fresh Produce

  • 2 lb butternut squash
  • 0.125 oz fresh sage
  • 0.125 oz fresh thyme
  • 1 Granny Smith apples
  • 1 oranges
  • 1 red onions
  • 1 sweet potatoes, each about 12 oz

Oil and Spices

  • 0.25 cup extra-virgin olive oil
  • 1 tsp freshly ground black pepper
  • 1 tsp kosher salt

Special Equipment

  • perforated grill pan


  • ¼ cup extra-virgin olive oil
  • 1 tablespoon minced fresh sage leaves
  • 1 tablespoon minced fresh thyme leaves
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper

  • 1 butternut squash, about 2 pounds, peeled, seeded, and cut into 1-inch cubes
  • 1 large Granny Smith apple, peeled, cored, and cut into 1-inch cubes
  • 1 medium sweet potato, peeled and cut into 1-inch cubes
  • 1 medium red onion, peeled and cut into wedges

  • Finely grated zest of 1 orange


  1. Prepare the grill for direct cooking over low heat (250° to 350°F) and preheat the grill pan.

  2. In a large bowl whisk the oil, sage, thyme, salt, and pepper. Add the squash, apple, sweet potato, and onion pieces and toss to coat evenly.

  3. Spread the vegetables and apple in a single layer on the grill pan. Grill over direct low heat, with the lid closed as much as possible, until tender, 20 to 25 minutes, turning occasionally. Transfer to a serving bowl and stir in the orange zest. Serve warm.

Roasted Butternut Squash Hash

The overall recipe is good but the cooking times appear to be in error. If you follow the 25 minute cooking time in the recipe, the squash and sweet potato do not get cooked. If you add more cooking time, the onions burn and the apples shrink from 1" chunks to 1/4" chunks - not good. I think the squash and sweet potato should initially cook for 30 minutes and the apple and onion should be added and cooked with the squash and sweet potato for an additional 25 minutes.
