  • 15g chopped fresh coriander
  • 1 small white onion chopped
  • 4 tbsp of sunblushed/ sundried tomatoes
  • 75ml olive oil
  • 2 grated garlic cloves
  • 4 tbsp of chilli jam Salt and pepper


This tasty and flavoursome roast cod recipe is fantastic for all seafood lovers.

  • Very finely chop coriander, onion and sun blushed tomatoes then add to a bowl. Add the oil, grated garlic and chilli jam, combine and add salt and pepper.
  • Smother the fish in the marinade and allow to infuse for at least 30 minutes.
  • Place fish in a Fish Basket and grill on a medium heat for 20 minutes turning halfway through or until cooked through.
