Carne Asada:

  • Completed step 1.2 kg beef skirt steak or flank steak
  • Completed step 3 tbsp olive oil
  • Completed step juice of 2 limes
  • Completed step 2 cloves garlic finely grated
  • Completed step 1 tsp ground cumin
  • Completed step 1 tsp smoked paprika
  • Completed step salt & pepper

To Serve:

  • Completed step 12 small corn tortillas
  • Completed step 1 small white onion finely diced
  • Completed step 1 bunch fresh coriander chopped
  • Completed step 2 limes cut into wedges

Thinly sliced beef grilled hot over direct heat, chopped and served simply in warm corn tortillas with onion, coriander and lime. 

    IN THE KITCHEN:

  • Combine oil, lime juice, garlic, cumin and paprika
  • Coat the beef evenly and season with salt and pepper
  • Leave to marinate for 30–60 minutes at room temperature
  • Finely dice onion and chop coriander
  • Prepare tortillas and garnishes
  • AT THE GRILL / BARBECUE:

  • Prepare the barbecue for direct cooking at around 230–250°C. If using a charcoal barbecue, light 1 chimney starter of Weber briquettes.
  • Grill the beef directly over high heat for 2–3 minutes per side until nicely charred
  • Remove and rest for 5 minutes
  • Slice thinly against the grain, then chop into small pieces
  • Warm tortillas directly on the grill
  • Build tacos with beef, onion and coriander
  • Finish with a squeeze of lime and a spoon of salsa
