Carne Asada:

Thinly sliced beef grilled hot over direct heat, chopped and served simply in warm corn tortillas with onion, coriander and lime.
IN THE KITCHEN:
Combine oil, lime juice, garlic, cumin and paprika
Coat the beef evenly and season with salt and pepper
Leave to marinate for 30–60 minutes at room temperature
Finely dice onion and chop coriander
Prepare tortillas and garnishes
AT THE GRILL / BARBECUE:
Prepare the barbecue for direct cooking at around 230–250°C. If using a charcoal barbecue, light 1 chimney starter of Weber briquettes.
Grill the beef directly over high heat for 2–3 minutes per side until nicely charred
Remove and rest for 5 minutes
Slice thinly against the grain, then chop into small pieces
Warm tortillas directly on the grill
Build tacos with beef, onion and coriander
Finish with a squeeze of lime and a spoon of salsa
