Instructions

  • Preheat the grill. Set up your grill for two-zone cooking and preheat to 350°F. 
  • Prepare the ribs. Remove the membrane from the bone side of the ribs using a paper towel for grip. With a sharp knife, cut between each bone to separate the ribs into individual pieces.
  • Season the ribs. Season all sides of each rib with Beef Rub. Alternatively, use equal parts salt, black pepper, and garlic powder.
  • Grill the ribs. Place the ribs over indirect heat. Grill for 45-60 minutes, rotating them 3-4 times for even cooking. Cook until the internal temperature reaches 195-200°F.
  • Glaze and finish. Brush the ribs with BBQ sauce. You can use one sauce or several sauces for different flavor options. Continue grilling for about 5 minutes, or until the ribs reach an internal temperature of 205°F. For more char, finish the ribs over direct heat. For softer, smokier ribs, keep them over indirect heat.
  • Rest and serve. Transfer the ribs to a cutting board and let them rest for 5 minutes. Since they're already individually sliced, they're ready to serve and enjoy
