Season the chicken: Coat the chicken thighs evenly with the Pig Beach Hot Honey BBQ Seasoning. Let them rest for 10-15 minutes while the grill heats.
Make the glaze: In a medium bowl, whisk together the honey, sriracha, sweet chili sauce, sambal, Old Bay Seasoning, cumin, and coriander until smooth.
Grill the chicken: Place the chicken over the medium-high heat zone and grill for 6-8 minutes per side, or until nicely browned with grill marks and the internal temperature reaches 160°F.
Glaze the chicken: Move the chicken to the low-heat zone and brush generously with the sweet chili glaze.
Finish cooking: Continue grilling for about 5 minutes, turning and brushing with more glaze as needed, until the chicken reaches an internal temperature of 165°F and the glaze is sticky and caramelized.
Garnish and serve: Transfer the chicken to a serving platter and garnish with the scallions, cilantro, and
lime wedges. Serve with the remaining sweet chili glaze on the side for dipping.

Combine all ingredients in a medium mixing bowl.
Stir until evenly blended.
