Quesadillas
  • Completed step 400 g can of black beans
  • Completed step 150 g mixed cooked vegetables (e.g. peppers, onions, mushrooms), chopped
  • Completed step 150 g shredded cheese (e.g. cheddar, mozzarella, or Red Leicester)
  • Completed step 6 large flour tortillas
  • Completed step 100 ml salsa or chopped fresh/tinned tomatoes
  • Completed step 2 tsp ground cumin
  • Completed step 2 tsp smoked paprika
  • Completed step Salt and cracked black pepper, to taste
  • Completed step 4 tbsp chopped fresh herbs (e.g. coriander, parsley, or basil)
  • Completed step 1 tbsp oil for cooking
  • Completed step Optional Garnishes: Sour cream, extra salsa, lime wedges, or chopped herbs

Instructions

    IN THE KITCHEN:

  • In a large bowl, combine black beans, vegetables, shredded cheese, salsa (or tomatoes), cumin, smoked paprika, herbs, salt, and pepper. Mix well.
  • Lay out the tortillas on a clean surface.
  • Spoon a generous portion of the filling onto one half of each tortilla, leaving a small border to prevent overflow.
  • Fold the empty half of the tortilla over the filling to form a semicircle. Press gently to seal.
  • AT THE GRILL:

  • Preheat the Weber Griddle to 200–220 °C.
  • Lightly oil the cooking surface.
  • Place the quesadillas directly on the hot griddle.
  • Cook for 3–4 minutes per side, pressing gently with a spatula until golden, crisp, and the cheese is fully melted.
  • Remove from the griddle and let rest for 1 minute before slicing.
  • Cut into wedges and serve warm.
  • Garnish with sour cream, salsa, and a sprinkle of fresh herbs.
