Orange and Honey Spiced Prawns by Sabrina Ghayour

Sabrina Prawns
  • Completed step 8 giant prawns (75-100g in weight each) shell on
  • Completed step Zest and juice of an unwaxed orange
  • Completed step 1 tsp of chilli flakes (or half if you prefer less heat)
  • Completed step 2 tbsp of garlic oil
  • Completed step 2 garlic cloves, crushed/minced
  • Completed step 3 tbsp of clear honey
  • Completed step 1 tsp of ground cumin
  • Completed step 1 tsp of ground cinnamon
  • Completed step 1 tsp of paprika (not smoked)
  • Completed step Maldon salt
  • Completed step Pepper to taste

Instructions

    In the kitchen

  • Place your prawns into a tupperware container with a lid (or bowl with clingfilm). Mix all the remaining ingredients together in a small bowl until you have a nice and even consistency.
  • Season generously with Maldon salt and pepper and pour the marinade over the prawns. Place the lid tightly on the container and shake to cover all of the prawns.
  • At the barbecue

  • Set your barbecue to a direct high heat. Place the prawns directly over the heat and sear on both sides until opaque and bright coral in colour.
  • Remove the prawns from the barbecue and finish with a touch more Maldon salt on each side. Serve immediately.
