Grocery List

Fresh Produce

  • 3 limes

Meat / Poultry / Seafood

  • 12 large chicken wings, each about 6 ounces

Oil and Spices

  • 0.5 tsp freshly ground black pepper
  • 0.5 tsp ground cayenne pepper
  • 1 tsp ground coriander
  • 2 tsp kosher salt

Condiments

  • 2 tbsp honey
  • 3 tbsp hot chili-garlic sauce, such as Sriracha
  • 2 tbsp soy sauce

Dairy

  • 1 tbsp unsalted butter

Ingredients

Rub

  • 2 teaspoons kosher salt
  • 1 teaspoon ground coriander
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon ground cayenne pepper

  • 12 large chicken wings, each about 6 ounces, wing tips removed

Sauce

  • 3 tablespoons fresh lime juice
  • 3 tablespoons hot chili-garlic sauce, such as Sriracha
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon unsalted butter

Instructions

  1. In a small bowl combine the rub ingredients. Pat the wings dry, and then place them in one layer on a sheet pan. Sprinkle with the rub, working it in on both sides with your fingers. Refrigerate the wings, uncovered, to air dry for about 4 hours.

  2. In a small saucepan over medium heat, combine the sauce ingredients. Stir until the butter melts, and then remove from the heat.

  3. Prepare the grill for direct and indirect cooking over medium heat (350° to 450°F).

  4. Grill the wings over direct medium heat, with the lid closed, until browned on both sides, 10 to 15 minutes, turning once or twice. Then move the wings over indirect medium heat and cook, with the lid closed, until the meat is no longer pink at the bone and the skin is crispy, 15 to 20 minutes more, turning once or twice and basting frequently with the sauce. Remove from the grill and brush with any remaining sauce. Serve warm or at room temperature.

GREAT TASTING WINGS!!

We made these wings found them to be delightful! Had a sneaky bite, very flavorful.

Sweet and Spicy Wings

I got to tell you, you will not be disappointed with the results of this recipe. They turned out looking exactly like the pic and were exactly like their name " sweet and spicy". My wife and friends were impressed with the results. I am gonna pay closer attention to the recipes Weber sends me from now on.

Amazing - This is a keeper!

The taste was amazing and the rub gave the skin a nice texture.
I would recommend doubling the sauce recipe because I did run low when basing the wings.

crowd pleaser

this recipe is marvelous, its nice and spicy with a great finish that eases through your palette. I almost did these in the oven but I wanted a good charred smoked flavor so I fired up my Weber Performer with some apple wood and let it do its magic.

Great wings!

I only had 1/2 the number of wings that the recipe called for, and ended up using the entire amount of dry rub on them. They turned out great! They definitely were a bit spicy, but I loved them. I will definitely make them the same way next time.

Absolutely will do this one again!

Raising the bar

I love the thought of "sweet and spicy" but let's face it, such claims rarely come true. I think this recipe raises the bar by achieving balance between those polar opposite tastes. I was not very familiar with Sriracha and when I poured those two teaspoons into the pan, I thought this would be a fiery dish that sends the family running. Quite the opposite happened. I don't know if it's the fresh lime juice or the honey or the soy, but those ingredients create some real teamwork to tame the Sriracha and allow it's hot flavor to survive. The open air technique with the rub contributed to a crisp skin that pit bosses dream about.

I served this with Zatarain's yellow rice and sugar snap peas. My wife and teenage son both had second helpings! That makes this recipe a success in our household.

Wonderful recipe Jamie! Thank you for sharing. I think this will be my go-to recipe for wings! This is an excellent tailgate recipe.

Terrific Recipe

My husband says these are the best wings he's ever had, quite the compliment! I agree with him, perfect blend of Siracha, honey and lime. Simple, easy and delicious. My 20y.o. son agrees, too, fwiw. Nice job, Weber!

Great Wings
