Instructions

Broccolini is one of my favorite grilled vegetables. Their sturdy stalks maintain structure while the multitude of tiny fronds char on the grill, creating a range of textures and flavors in one. The finish of lemon zest and parmesan offer that extra touch for special occasion meals.
  • Prepare the grill for Direct Medium-High Heat cooking, 450°–500°F. Preheat for 15 minutes and brush the grill grates clean.
    Set the grill to 475°F. Preheat for 15 minutes and brush the grill grates clean.
  • Toss the broccolini with the oil, salt, and black pepper.
  • Place on the grill and cook, with the lid closed until well charred and crisp-tender, 4–6 minutes per side.
  • Transfer the grilled broccolini back to the mixing bowl you seasoned them in. Toss them with half of the parmesan cheese and lemon zest before transferring them to a platter. Top it with the remaining parmesan and lemon zest to serve.
