Broccolini is one of my favorite grilled vegetables. Their sturdy stalks maintain structure while the multitude of tiny fronds char on the grill, creating a range of textures and flavors in one. The finish of lemon zest and parmesan offer that extra touch for special occasion meals.
Prepare the grill for Direct Medium-High Heat cooking, 450°–500°F. Preheat for 15 minutes and brush the grill grates clean.
Set the grill to 475°F. Preheat for 15 minutes and brush the grill grates clean.
Toss the broccolini with the oil, salt, and black pepper.
Place on the grill and cook, with the lid closed until well charred and crisp-tender, 4–6 minutes per side.
Transfer the grilled broccolini back to the mixing bowl you seasoned them in. Toss them with half of the parmesan cheese and lemon zest before transferring them to a platter. Top it with the remaining parmesan and lemon zest to serve.
