Fresh Produce

  • 0.125 oz fresh Italian parsley
  • 2 garlic cloves

Meat / Poultry / Seafood

  • 1 lb live mussels

Oil and Spices

  • 0.5 tsp freshly ground black pepper
  • 0.5 tsp kosher salt


  • 0.5 oz Parmigiano-Reggiano® cheese
  • 0.25 cup unsalted butter


  • 2 tbsp panko bread crumbs

Special Equipment

  • perforated grill pan or cast-iron skillet



  • ¼ cup (½ stick) unsalted butter, softened
  • ¼ cup finely grated Parmigiano-Reggiano® cheese
  • 2 tablespoons panko
  • 2 medium garlic cloves, minced
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon kosher salt

  • 24 large, live mussels, scrubbed and debearded
  • 2 tablespoons minced fresh Italian parsley leaves


  1. Prepare the grill for direct cooking over medium heat (350° to 450°F). 

  2. In a small bowl combine the topping ingredients and blend with a fork. 

  3. Brush the cooking grates clean. Grill the mussels over direct medium heat, with the lid closed, until they open, 2 to 5 minutes. Transfer the mussels to a plate. Discard any mussels that have not opened. Preheat the grill pan over direct medium heat for about 10 minutes.

  4. When the mussels are cool enough to handle, pull away the top shell, leaving the mussel in the bottom half of the shell. Spoon 1 teaspoon of the topping on top of each mussel. 

  5. Place the mussels in a single layer on the grill pan. Grill over direct medium heat, with the lid closed, until the topping is bubbling, 2 to 5 minutes. Remove from the grill and top with the parsley. Serve immediately.

Mussels on the half shell

I wasn't too sure when I decided to give this recipe a try but after I made them there was one big problem. There weren't anymore! These little fellas were excellent. I mean really excellent! I'm not really sure why I was hesitant at first because I don't know if you can cook anything on the charcoal grill that doesn't taste good. Good recipe. I am sure to do this one again.

Grilled them then smoked em'

Wanted to try this, finally found fresh mussels. I like mussels to start with so I expected nothing but deliciousness and boy did I get it!
I did the first batch as recipe calls for (except I only had salted butter). It wasn't over salty but didn't add any on the next round.

For the next round I used a small pot with lid and added a cheap chardonnay to steam open the mussels. When cooled, I removed half of the shell, added topping and finished them in my WSMC with peach wood. Very good! My wife will usually only eat a few mussels, asked me to make more and more and more. SHE LOVED THEM! Give it a try.
