Putting Healthy In

Each year we sit down on December 31st, paper in hand, as we talk about how this coming year will be different and what we can do to make it the best year ever. For me, 2014 is a time for change.

This past year I was diagnosed with skin cancer and went through several procedures to become cancer free, and as part of that I have taken a look at what I not only put on my body, but what I put in my body. For this year, my grilling resolution is to be grilling a lot more fish and vegetables as a way to show appreciation to my body.

I will venture outside of my comfort zone of grilling chicken, zucchini, and potatoes and enter the realm of tofu, eggplant, and squash. My current love is grilled squash, any squash- acorn, spaghetti, etc. The flavors and textures are amazing!  

I also have a new found love of tofu and I’m going to experiment with marinades from around the world to add depth and flavor and I will master it before the end of the year. So, I ask you, what is your grilling resolution for this year and how can we help you achieve it?
