Maple Smoke Glaze / Rub:

  • Completed step 80 g pure maple syrup
  • Completed step 30 g butter, melted
  • Completed step 20 g soy sauce
  • Completed step 10 g apple cider vinegar
  • Completed step 5 g smoked paprika
  • Completed step 3 g garlic powder
  • Completed step 2 g black pepper
  • Completed step 1–2 g chili flakes (optional)

Gorgonzola Dip (optional):

  • Completed step 120 g Gorgonzola cheese, crumbled
  • Completed step 120 ml sour cream
  • Completed step 60 ml mayonnaise
  • Completed step 10 ml lemon juice
  • Completed step 5 g fresh chives, finely chopped
  • Completed step Black pepper

Instructions

    IN THE KITCHEN:

  • Pat wings dry thoroughly
  • Season wings with oil, salt and pepper
  • Mix all glaze ingredients
  • Toss wings lightly in glaze
  • Reserve remaining glaze for finishing
  • Prepare dip and chill
  • Preheat grill
  • AT THE GRILL / BARBECUE:

  • Prepare the grill for indirect heat 170–200°C
  • Preheat the grill for 15 min
  • Place wings over indirect heat
  • Close lid and cook 35–40 min
  • Turn wings once during cooking
  • Brush wings with remaining glaze
  • Finish over direct heat for crisp skin
