IN THE KITCHEN:
Pat wings dry thoroughly
Season wings with oil, salt and pepper
Mix all glaze ingredients
Toss wings lightly in glaze
Reserve remaining glaze for finishing
Prepare dip and chill
Preheat grill
AT THE GRILL / BARBECUE:
Prepare the grill for indirect heat 170–200°C
Preheat the grill for 15 min
Place wings over indirect heat
Close lid and cook 35–40 min
Turn wings once during cooking
Brush wings with remaining glaze
Finish over direct heat for crisp skin
