  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon sweet pickle relish
  • 1 teaspoon fresh lemon juice
  • ½ teaspoon kosher salt
  • 1 tablespoon unsalted butter, softened
  • 4 slices rye bread
  • 1 cup sauerkraut, drained
  • 8 ounces thinly sliced cooked turkey
  • 4 ounces sliced Swiss cheese

Instructions

  • In a bowl whisk the dressing ingredients.
  • Prepare the grill for direct cooking over medium heat (350° to 450°F). Preheat the griddle over direct medium heat for 5 minutes.

  • Butter one side of each bread slice. Flip the bread slices and spread 1 to 2 tablespoons of dressing on the dry sides. Layer the sauerkraut, turkey, and cheese on 2 slices. Top with the remaining 2 bread slices, butter-side up.
  • Place the sandwiches on the griddle and grill, with the lid closed, until the bread is toasted, and the cheese begins to melt, about 3 minutes. Using a spatula, flip the sandwiches and grill, with the lid closed, until the bottoms are toasted, about 3 minutes more. Serve at once.
