This is a breakfast that both feeds a family and makes you feel accomplished—it's just you, the griddle, and the dance of putting it all together at the same time. After a few rounds, you’ll be able to do it one-handed while drinking a cup of coffee. Feel free to double the recipe if you need to feed a crowd.
Place a griddle insert into the grill and preheat to medium heat (375°–425°F) for 15 minutes.
Preheat the griddle on medium heat for 10 minutes.
Place a griddle insert into the grill and set to Manual Mode Level 6. Preheat for 15 minutes.
Toss the potatoes with 2 tbsp of the vegetable oil, steak seasoning, paprika, and ½ tsp of the salt.
Bring the seasoned potatoes, bacon, eggs, butter, and remaining salt and pepper to the griddle.
Add the remaining 1 tbsp vegetable oil to the griddle and spread it around with a spatula. Add the potatoes in a single layer. Cook without stirring until browned on the bottom, about 5 minutes.
Flip and stir the potatoes. Cook until golden and almost tender, about 5 minutes more, stirring occasionally (see recipe tips below).
Push the potatoes to one side of the griddle and lay out the bacon on the other side in a single layer.
Cook the bacon until browned on the first side, 5–6 minutes. Flip and continue cooking until crisp. Flip the potatoes occasionally so they cook evenly and thoroughly.
Remove the bacon when it reaches your preferred doneness. Taste a large piece of potato; if not fully tender, cook for another 5 minutes. When done, remove the potatoes from the griddle.
Scrape the griddle clean. Add the butter and spread it around as it melts.
Crack the eggs onto the buttered surface and season with the remaining salt and the black pepper. Cook for about 1½ minutes (for sunny-side up), or until done to your liking. Flip for over-easy, medium, or hard.
Recipe Tips
You may be tempted to add the bacon earlier, but resist the urge! The goal is to have everything ready at the same time, so giving the potatoes time to cook before adding the bacon ensures that they are fully tender when the bacon is hot and crisp.
