Rated 5 out of 5 by from An Almost Perfect Smoker This might be the perfect smoker. I was looking for a smoker to use in the open part of my lanai. It would need to be rolled out from under cover, then used, cooled down and returned under cover. I have a pellet smoker, but I just don't like the lack of flavor compared to anything that cooks with charcoal. I had owned a Green ceramic kamado for years. It was part of a built in outdoor kitchen which stayed when we sold that house I loved the way it smoked food, but I was a little afraid of buying one to move around on a regular basis. The same is true of the popular red ceramic kamado. I just wasn't comfortable moving a 200 plus pound ceramic on a fairly flimsy cradle. When I owned the ceramic kamado, I also owned a Weber Kettle to cook steaks on. That 2 zone cooking method I always used for steaks just didn't work on an 18 inch ceramic. The Summit Kamado does both and does them extremely well. I still haven't used the char baskets, but I'm not sure if I'll need them. For long cooks, I've used this exactly as I had used the ceramic kamado. Almost everything I knew from that one transfers, except that the temperature control is a lot easier on the Weber. With the ceramic, if I overshot my temperature target, it took quite a while to drop the temperature back down. With the Weber, it's much easier. I haven't cooked a brisket yet so I can't be sure about this, but from my experience on shorter cooks, there should be no reason I couldn't get 16 to 20 hours at 225, which is longer than the ceramic. And the temperature seems to hold rock steady with almost no effort on my part. I have a fan that works in conjunction with my temperature probes, but I'm not sure if I even need it. Maybe for those 12 plus hour cooks, but certainly not for ribs or chicken or even a pork butt. Cooking steaks is just like cooking them on the kettle. The only difference is the location of the top vent, but it hasn't made a difference in the flavor. I always cook over hot coals on one side of the grill, then toss a chunk or the of mesquite onto the coals a few minutes before putting the steaks on. With the kettle, I opened the vents fully and positioned them on the opposite side from the meat. If I could change anything, I wish there was a way to keep the center ring of the cooking grid in place so I could hang the grid on the edge of the kettle. As it is, I can't figure out how to do that. Also, if there was an easier way to move and lift the charcoal grids, that would be great. Other than those two minor things, I haven't found anything else. I think Weber did a great job in the design of this thing and I honestly can't figure out why it isn't more popular. It's 24 inches across, yet the cost is comparable to an 18 inch ceramic. It's extremely efficient and ridiculously versatile. I have absolutely no regrets that I bought it and look forward to many years of happy smoking.
