Squeeze the Sides

Because steaks get firmer as they grill, one way to judge their doneness is by lightly squeezing the sides with tongs. It takes time to learn just how firm each type of steak will feel at each level of doneness, but this is how many restaurant chefs work, and it's a technique worth practicing.
