Grocery List

Fresh Produce

  • 4 garlic cloves
  • 1 lemons
  • 1 yellow onions

Meat / Poultry / Seafood

  • 4 whole chicken legs, each 10 to 12 oz

Oil and Spices

  • 2 tbsp extra-virgin olive oil
  • .5 tsp freshly ground black pepper
  • .5 tsp granulated garlic
  • 2 tsp kosher salt
  • 2 tsp smoked paprika


  • 1 cup ketchup
  • 2 tbsp whole-grain mustard


  • .25 cups golden brown sugar
  • 4 fl oz lemon-lime carbonated beverage (not diet)

Special Equipment

  • 2 handfuls hickory wood chips



  • 2 tablespoons extra-virgin olive oil
  • ½ cup finely chopped yellow onion
  • 2 teaspoons minced garlic
  • 1 cup ketchup
  • ½ cup lemon-lime soda (not diet)
  • ¼ cup fresh lemon juice
  • ¼ cup packed golden brown sugar
  • 2 tablespoons whole-grain mustard


  • 2 teaspoons smoked paprika
  • 2 teaspoons kosher salt
  • Finely grated zest of 1 lemon
  • ½ teaspoon granulated garlic
  • ½ teaspoon freshly ground black pepper

  • 4 whole chicken legs, 10 to 12 ounces each, cut into thighs and drumsticks


  1. Soak the wood chips in water for at least 30 minutes.

  2. In a medium saucepan over medium heat, cook the oil, onion, and garlic until golden, about 10 minutes, stirring often. Add the rest of the sauce ingredients and stir to combine. Bring the sauce to a simmer, reduce the heat to low, and cook until slightly thickened, 10 to 15 minutes, stirring often.

  3. In a small bowl mix the rub ingredients. Sprinkle the rub evenly all over the chicken pieces.

  4. Prepare the grill for direct and indirect cooking over medium heat (350° to 450°F).

  5. Brush the cooking grates clean. Grill the chicken, skin side down, over direct medium heat, with the lid closed as much as possible, until golden brown, 8 to 10 minutes, turning occasionally. Move the chicken pieces over indirect medium heat. Drain and add the wood chips to the charcoal or to the smoker box of a gas grill, following manufacturer’s instructions. Continue to grill the chicken, with the lid closed, for about 20 minutes. Then brush both sides with a thin layer of the sauce and cook until the juices run clear and the meat is no longer pink at the bone, about 15 minutes, occasionally turning and brushing with the sauce. Serve warm or at room temperature with the remaining sauce on the side.

needed more time, but a good one I'll try again

This was fairly fun and easy for me to make. I really enjoyed using the hickory wood chips -- the smell of my back yard was fantastic! I have a Weber gas grill, and my chicken needed about 20 more minutes of cooking time. I was cooking it with the front burner on medium-high, and I was cooking over the front burner, but underneath the chicken was my homemade smoke box (a small 9x9 aluminum cooking tray filled with the water-soaked chips and wrapped with 1 layer of aluminum foil with smoke-venting holes in the top). Because the smoke box blocked a lot of the heat, I considered this to be indirect.

Anyway, I'm going to try this again, but I'm going to give it more cooking time next time! I hope this helps!

I've used this cooking method a few times, and the chicken always comes out good. I use a different rub and sauce, but the cooking method is solid.

Love this chicken

Whole chicken leg are legs and thighs. Some places call these leg quarters and they usually come in a four pack. So that is four legs and four thighs. The sauce is really good. Follow the recipe. Don't start thinking you like so and so sauce from wherever and skip it. I have made this recipe over 10 times. I tried to substitute the sauce with bullseye and other sauces three times and it doesn't match up. Make the sauce. It is incredible. I have a Weber Genesis E-310. I use my charcoal box to get the smoke.

I mix the hickory chips with maple chips. Hickory wold be find by itself. I usually make this recipe with baked beans in a lodge pot on my weber grill. After 15 minutes on soaking the chips, get the grill going. By the time it is ready and cleaned, the chips are ready. The rub, I usually end up using extra but still follow the recipe. Watch the flare up the first five minutes. Follow the directions after that.

This is one of my favorite recipes and I grill 5 nights a week with weber recipes.
