Grocery List

Fresh Produce

  • 4 garlic cloves
  • 1 lemons
  • 1 yellow onions

  • 4 whole chicken legs, each 10 to 12 oz

Oil and Spices

  • 2 tbsp extra-virgin olive oil
  • .5 tsp freshly ground black pepper
  • .5 tsp granulated garlic
  • 2 tsp kosher salt
  • 2 tsp smoked paprika

Condiments

  • 1 cup ketchup
  • 2 tbsp whole-grain mustard

Other

  • .25 cups golden brown sugar
  • 4 fl oz lemon-lime carbonated beverage (not diet)

Special Equipment

  • 2 handfuls hickory wood chips

Ingredients

Sauce

  • 2 tablespoons extra-virgin olive oil
  • ½ cup finely chopped yellow onion
  • 2 teaspoons minced garlic
  • 1 cup ketchup
  • ½ cup lemon-lime soda (not diet)
  • ¼ cup fresh lemon juice
  • ¼ cup packed golden brown sugar
  • 2 tablespoons whole-grain mustard

Rub

  • 2 teaspoons smoked paprika
  • 2 teaspoons kosher salt
  • Finely grated zest of 1 lemon
  • ½ teaspoon granulated garlic
  • ½ teaspoon freshly ground black pepper

  • 4 whole chicken legs, 10 to 12 ounces each, cut into thighs and drumsticks

Instructions

  1. Soak the wood chips in water for at least 30 minutes.

  2. In a medium saucepan over medium heat, cook the oil, onion, and garlic until golden, about 10 minutes, stirring often. Add the rest of the sauce ingredients and stir to combine. Bring the sauce to a simmer, reduce the heat to low, and cook until slightly thickened, 10 to 15 minutes, stirring often.

  3. In a small bowl mix the rub ingredients. Sprinkle the rub evenly all over the chicken pieces.

  4. Prepare the grill for direct and indirect cooking over medium heat (350° to 450°F).

  5. Brush the cooking grates clean. Grill the chicken, skin side down, over direct medium heat, with the lid closed as much as possible, until golden brown, 8 to 10 minutes, turning occasionally. Move the chicken pieces over indirect medium heat. Drain and add the wood chips to the charcoal or to the smoker box of a gas grill, following manufacturer’s instructions. Continue to grill the chicken, with the lid closed, for about 20 minutes. Then brush both sides with a thin layer of the sauce and cook until the juices run clear and the meat is no longer pink at the bone, about 15 minutes, occasionally turning and brushing with the sauce. Serve warm or at room temperature with the remaining sauce on the side.

A Beginner's assesment

I have never owned a gas grill and consequently, never done any grilling, but I must say that this grill does make it REALLY EASY to cook great food. In one week I've tried: Steaks, Boneless Chicken Breasts, Pork Ribs, Burgers, and Bratwurst. They have all turned out really well. Basically I cook everything to an internal temperature to 165 F minus steaks. The light is also very helpful, and I would recommend seasoning the cast iron grill before using it for the first time.

Highly Recommend

Everyone said get a Weber. Well my Q 320 was outstanding yesterday at our BBQ. 40 hot dogs at once and 12 burgers at a time. Everything cooked evenly and to perfection. The grill surface is bigger than it looks. Easy to clean. Ignites right away every time. Best grill I have ever owned. Bought my Weber at True Value in N.H. $379 and a free filled propane tank.
