Lemon-Oregano Chicken Kabobs over Confetti RiceRecipe by Jamie Purviance

Grocery List

Fresh Produce

  • 2 bell peppers, 1 red and 1 yellow
  • .25 oz fresh Italian parsley
  • .25 oz fresh oregano
  • 1 garlic heads
  • 1 lemons
  • 1 red onions
  • 3 zucchini, each about 4 oz

Meat / Poultry / Seafood

  • 6 boneless, skinless chicken thighs, each 3 to 4 oz

Oil and Spices

  • .25 cups extra-virgin olive oil
  • .25 tsp freshly ground black pepper
  • 1.25 tsp kosher salt


  • 1 cup long-grain white rice
  • 1 pint low-sodium chicken stock (or broth)

Special Equipment

  • metal or bamboo skewers



  • 3 tablespoons extra-virgin olive oil
  • Finely grated zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons finely chopped fresh oregano leaves
  • 1 tablespoon minced garlic
  • ¾ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

  • 6 boneless, skinless chicken thighs, each 4 to 5 ounces
  • 3 medium zucchini, about 12 ounces total


  • 1 tablespoon extra-virgin olive oil
  • 1 cup finely chopped red onion
  • 2 teaspoons minced garlic
  • ½ cup finely chopped red bell pepper
  • ½ cup finely chopped yellow bell pepper
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • ½ teaspoon kosher salt
  • 2 tablespoons finely chopped fresh Italian parsley leaves


  1. In a medium bowl whisk the marinade ingredients. Cut the chicken thighs into 1-½-inch pieces. Cut each zucchini lengthwise in half, and then cut each half crosswise into 1-inch pieces. Add the chicken thigh pieces and the zucchini pieces to the bowl with the marinade and turn to coat them thoroughly. Cover and refrigerate for 2 to 4 hours.

  2. If using bamboo skewers, soak in water for at least 30 minutes.

  3. Prepare the grill for direct cooking over medium heat (350°F to 450°F).

  4. Meanwhile, prepare the rice. In a medium saucepan over medium-high heat, warm the oil. Add the onion and garlic and cook until they start to soften, about 2 minutes, stirring occasionally. Add the bell peppers and cook for 2 minutes. Add the rice and cook for 1 minute, stirring occasionally. Pour in the broth, add the salt, and bring to a boil. Cover, reduce the heat to low, and simmer very gently until all the liquid has been absorbed, about 20 minutes. Remove from the heat and stir in the parsley. Keep warm.

  5. Thread the chicken pieces and the zucchini pieces alternately onto skewers. Brush the cooking grates clean. Grill the kabobs over direct medium heat, with the lid closed as much as possible, until the meat is firm to the touch and the juices run clear, 8 to 10 minutes, turning once or twice. Remove from the grill and let rest for 3 to 5 minutes. Serve the kabobs warm over the rice.

Delicious, quick & easy!

Made this for my wife and 2 young children, and everybody loved it! We actually substituted basil instead of oregano because we had fresh basil growing in our garden and it was amazing. We also added squash and red onions to the skewers to get a couple more veggies involved. Would highly recommend this recipe!

Nice combination

Boneless chicken thighs pose a bit more of a challenge to cut into cubes than boneless breasts. But once we carved away the excess fat on the thighs -- or as much as we could -- they made a nice combination with the zucchini. The confetti rice adds a great "bed" for the skewered meat and veggies. I would suggest, however, staying away from Uncle Ben's brand rice for this recipe because we thought the "converted" rice got too fluffy and did not let the flavor of the other ingredients to shine through. We made this for a large family gathering and it was a big hit. Everyone thought I'd made up a great dish. Yes, I admitted it wasn't my recipe.

This recipe was so delicious and brigh, I made it with zuccini. The next day I made Chicken Salad with the Chicken AND the zuccini and the taste of the grilled zuccini made the chicken salad a HIT!

Very Tasty and Healthy

This is a quick recipe that came out great. Here's a couple tips that helped me:

1) After I zested my lemon I squeezed the juice out of it and used it in the recipe rather than using a concentrate lemon juice. The quantity worked out just right.
2) I generally double the sauces and marinades in most recipes and that worked well for this one as usual.
3) I put slices of lemon on the kabob with the chicken and zucchini and it seemed to really enhance the lemon flavor.

Really, Really Good

Shortly after getting my new Weber gas grill, I decided I wanted to try a variety of new recipes - expanding beyond burgers, chicken breasts, hot dogs, etc. Since we like chicken, I started on the Weber website and searched to find a chicken recipe. This one caught my eye.

The grilled kabobs were really, really good. I would highly recommend this recipe. The confetti rice was also very good and a nice complement to the kabobs.

In my opinion, the estimated preparation time of 25 minutes is significantly understated. I had chicken thighs, but they were not boneless nor skinless. Removing the skin was easy, but deboning was slow and tedious. (The second time i made this recipe, I bought boneless, skinless thigh meat - much easier.) Even without the deboning time (on my second attempt), I think the prep time was closer to 90 minutes, including time to build the skewers.

Like others, I added some other veggies to the mix - yellow squash and onions. Obviously, the recipe is very flexible in this area.
