  • 3 lb chicken wings

Oil and Spices

  • 2 tbsp extra-virgin olive oil
  • 1.5 tbsp granulated garlic
  • 2 tsp paprika
  • 2 tsp pure chile powder


  • .25 cups balsamic vinegar
  • 2 tsp Dijon mustard
  • 1 tbsp hot pepper sauce
  • .5 cups ketchup
  • 1.5 tbsp Worcestershire sauce


  • 2 tbsp dark brown sugar



  • ½ cup ketchup
  • ¼ cup balsamic vinegar
  • 2 tablespoons packed dark brown sugar
  • 4 teaspoons granulated garlic
  • 4 teaspoons Worcestershire sauce
  • 3 teaspoons hot pepper sauce
  • 2 teaspoons Dijon mustard
  • 2 teaspoons paprika
  • 2 teaspoons pure chile powder

  • 20 chicken wings, about 3 pounds total, wing tips removed
  • Extra-virgin olive oil


  1. In a medium bowl whisk the marinade ingredients. Place the wings in a large, resealable plastic bag and pour in the marinade. Press the air out of the bag and seal tightly. Turn the bag to distribute the marinade, place in a bowl, and refrigerate for 4 to 6 hours, turning occasionally.

  2. Prepare the grill for direct and indirect cooking over medium heat (350° to 450°F).

  3. Remove the wings from the bag and discard the marinade. Lightly brush the wings with oil. Brush the cooking grates clean. Sear the wings over direct medium heat, with the lid closed as much as possible, until well marked, 4 to 6 minutes, turning once. Then move them over indirect medium heat and continue cooking until the meat is no longer pink at the bone, 10 to 20 minutes, turning once or twice. If desired, during the final few minutes, move the wings over direct medium heat to crisp the skin a bit more, turning once or twice. Remove from the grill and serve warm.

This is a wonderful recipe! I have used it a number of times. It can be made extra spicy with a bit more hot sauce if desired. Oiling the wings before cooking is essential!

Hot sticky wings

I trying it tomorrow I added a slight twist to it by adding 1/4 tsp crushed red paper flakes, and 1 tsp minced garlic? Don't know how much it's gonna kick it up but I'll have some cold beer waiting!!

Great wing recipe - huge hit at summer BBQ

Neighbors were having a 4th of July party and I didn't want to show up empty-handed. So I whipped up the marinade and put the wings in the refrigerator for 90 minutes and then onto the grill. Didn't marinade the entire time the recipe requires, just didn't have time, but they were delicious. No one needs blue cheese or ranch with this recipe. I followed the recipe exactly as instructed.

This makes for great appetizer at a party or just for dinner.

13yr first time

My daughter cooked this as her first go at cooking on our new weber gas BBQ. My wife doesn't like spicy so she basted mine with the chilly separately. The cucumber salad was bonzer as well.
