Ingredients

Mayonnaise

  • 2 tablespoons grated white onion
  • 1 Hass avocado, pitted and peeled
  • 2 tablespoons mayonnaise
  • 2 plum tomatoes, cored, seeded, and chopped
  • 1 tablespoon finely chopped fresh cilantro leaves
  • 2 teaspoons fresh lime juice
  • 1 small garlic clove, grated
  • Kosher salt

  • 2 poblano chile peppers
  • 1½ pounds ground chuck (80% lean)
  • 1½ teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

  • 4 hamburger buns, split

Instructions

  1. Rinse the onion in a fine mesh strainer under cold water and let the excess water drain off. In a medium bowl mash the avocado and mayonnaise together with a fork. Stir in the onion, tomatoes, cilantro, lime juice, and garlic. Season generously with salt. Cover with plastic wrap, pressing the wrap directly onto the surface, and set aside. (The mayonnaise can be prepared up to 8 hours ahead.)

  2. Prepare the grill for direct cooking over high heat (450° to 550°F).

  3. Brush the cooking grates clean. Grill the chiles over direct high heat, with the lid closed as much as possible, until the skin is blackened on all sides, about 10 minutes, turning occasionally. Transfer the chiles to a bowl and cover with plastic wrap to trap the skin. Let stand for about 10 minutes. Remove the chiles from the bowl and peel off and discard the blackened skin, stems, and seeds. Chop the chiles into ½-inch dice.

  4. In a large bowl gently mix the ground chuck, chiles, salt, and pepper, and shape into four patties of equal size and thickness, about ¾ inch thick. With your thumb or the back of a spoon, make a shallow indentation about 1 inch wide in the center of each patty so the centers are about ½ inch thick. This will help the patties cook evenly and prevent them from puffing on the grill.

  5. Grill the patties over direct high heat, with the lid closed as much as possible, until cooked to medium doneness, 8 to 10 minutes, turning once when the patties release easily from the grate without sticking. During the last minute of cooking time, toast the buns, cut side down, over direct heat. Top the burgers with the mayonnaise and serve warm.

Very nice!

My new Weber Spirit S-210 arrived yesterday, assembled and ready to go. I bought the natural gas version because I don't like the experience of refilling LP tanks and running out of fuel in the middle of a cookout. We wanted the Spirit S-210 based on it's smaller size, and the size is very adequate for our needs. I also like the fact that the side shelves fold down for storage. I read over the owner's manual and lit the grill. It was very responsive, fired up immediately and preheated much quicker than I was expecting. Due to time constraints, I grilled burgers last evening for the 'maiden voyage' and was very pleased with the results. Today, I had a bit more time, so I prepared an entire meal on the grill: marinated chicken breasts, grilled marinated yellow squash, grilled corn on the cob w/ basil-parmesan butter, from the Weber recipe file, and I even baked chocolate brownies for dessert, so I wouldn't have to heat up the kitchen. Everything came out very nicely, but I had to watch and check the grill frequently to avoid overcooking or burning anything, especially the brownies! The grill gets very hot and reaches the desired temperature much quicker than my old grill, which is not a complaint, but just an observation. As I get used to the grill and the heat output based on the control knob settings, I believe the cooking process will be a little more relaxing. It's a bit premature to rate the grill as to durability and overall quality, after only two days, but I'm very happy with my purchase so far. My question to the Weber customer assistance staff was answered quickly and courteously. A very nice product so far, and I would definitely recommend this product to a friend.

Great new grill

This grill replaced a large Jenn-air grill that I had for 9 years. I love the compact size and even heating. I only wish the stainless steel model had an option for a side burner. Other than that, no complaints.

Super easy to assemble, but make sure you have a buddy around to help out.
