How did I live without one?

This is the first smoker I have ever bought and I have been wondering for the past few days since buying it, how I have managed without one before?

After a bit of worrying that after an hour of adding charcoal, the temp with all dampers open went straight to "smoke" on the lid thermometer, then started dropping, but after 2 hours, it was over the "smoke" section and had to then adjust the dampers to get the temperature steady at 225F. I used it for the first time yesterday and the single chimney of briquettes I put in to the centre of a "ring" of non-lit briquettes, and it stayed in the "smoking range" for well over 12 hours.

The flat brisket & boston butt were perfect, and using the top grill to slow cook thick sausages instead of using direct heat was a real eye opener as they cooked in the the same amount of time, without the burnt skins. Even 3/4" thick burgers were seared on the Compact first before being placed on the top grill section for 10 minutes or so, so the centre of the burgers remained extremely moist and perfectly cooked.

This is the best £400 I have ever spent & the kitchen oven is now a thing of the past.

Big cooker - long distance cooking without hassle

We love our WSM. Just fill in 20 pounds of charcoals, add the meat and fill the pan with water. This thing runs 15 hours very steady on the temperature.

Due to the large surface it reacts sensitive on temperature changes in winter and some more fuel is consumed. The cooker recovers quick when the wind is not blowing to so much anymore due to the water in the pan. The pan takes 2 gal water. Fits for about 12 hours job, then needes to be replenished. Good advice is not to use cold water, but warm.

We run the cooker pouring in all coals from the beginning and just ignite some coals in the center. Works nice. It takes about an hour to bring in steady temperatures. Then it stays.

WSM 22.5. One big, bad cooker.

I'm going on my 5th season with my WSM. Prior to that I had a Traeger pellet cooker for 3 years. While the pellet cooker was very convenient (especially on cold, snowy mornings) it never delivered the real wood smoke flavors I was looking for. Finally a friend loaned me his WSM to try out. I was hooked. Real BBQ. Cooked over charcoal and real wood chunks.

I sold my Traeger and bought a WSM and a Weber Performer Grill. Cooking over a real fire with real wood makes such a difference in flavor.

I still miss my Traeger on cold winter mornings. flipping a switch is very easy. But I'll trade convenience for real BBQ flavor any day.

*** Note: The WSM is very easy to light and control.

Fix it & forget about it!!!

Excellent Smoker, you can smoke everything here, you just have to fix your fire at the beginning and you can leave it over night and it will maintain the temperature steady for hours, so you can have a good night sleep dreaming of the great pork shoulder, brisket or whatever you are smoking in there, I was a little bit nervous when I bought it because I got the big 22.5", but I thank God I did it, it's simply one piece of art!!!!

This smoker is great in fact my daughter and myself won a smoke off we had best ribs and have only been smoking since June. We are quite happy with the 22.5 inch smoker

I love this Smokey Mountain Cooker

I ordered this Smoker a few months ago after watching BBQ pitmasters and realized that I have been missing a very valuable cooking tool. I have the Weber Gold 22.5 and figured this would be a great addition. I must say that this smoker is an extreme load of awesome!! I used this for the first time a few months ago and I was amazed at how my ribs came out!! I then did a huge cookout and must say I had a blast but I was still learning this smoker. I have not figured out the best way to make my ribs and everyone loves them! Next on deck is a turkey and roast pork. I highly recommend this to anyone who is trying to step there game up and do some serious cooking. Will be hosting X-mas and putting this smoker to good use.

The best brisket and pulled pork ever!

I bought this bad boy after my electric smoker bit the dust. I made some great food on my electric smoker, but nothing compared to this 22.5" Smokey Mountain. What made me land on the Weber was my other Weber, my Genesis 310. I know that Weber is going to be a step up from the competition at your local home improvement store. I had to go to a specialty grill store in town to find one in stock, but they are out there if you call around. The first thing that I noticed was how heavy duty it was. It was same feeling I got when I purchased my Genesis. You just know that this will last a very, very long time.

My maiden voyage was smoking some veggies for my salsa, which came out great. This last weekend we had a bunch of friends over so I decided to do a brisket and a pork shoulder. I was amazed to see that one bag of charcoal would burn for over 12 hours straight. With the multiple vent system it's easy to keep the temp right in the sweet spot with minimal adjustment along the way. I just added the wood for flavor every few hours. I used oak this time, but I also like hickory, pecan and mesquite. I will say that after 12 hours in this baby, the meat had a beautiful bark on it and a nice pink smoke ring. I live in the Dallas/Fort Worth area and have eaten some great BBQ in my day, but the food that I made on my first attempt was as good, if not better than any I've had in Texas! All of my friends raved about how tender and flavorful it was. Truly this will be a great addition to your culinary arsenal.

I love it!

This is the easiest smoker I've ever used. The only thing i would improve on is the door that gives access to the fuel. It falls off easily ......feel like for the money spent it could be attached some how. Overall i have no regrets!!
