Fantastic

I had wanted the 22.5 WSM, but this 18.5 WSM was a better fit for my back deck and family of 5. I have been very pleased with this smoker. I have smoked 16 pounds of pork shoulder at one time for co-workers with room to spare. It is also my favorite way to cook the family turkey on Thanksgiving. Chicken, ribs, and large amounts of appetizers have also churned out great on here. I have yet to try brisket or prime rib, but I have heard they turn out great as well on the WSM. My only issue has been that my backyard is very windy, which uses up the charcoal faster. I love the smell of lump charcoal, but the temp stays more consistent with briquettes. This smoker is a great value!

Take the plunge

I've been smoking meats for more than 30 years and have gone through a load of different smokers. Many are difficult to operate because of the poor fire pans snuffing themselves out. Most of those other brand smokers were less than $100 . Just about all the others I've tried lasted for a season or two at best. At first glance I felt the Weber was a tad pricey until I actually got my hands on one . They make these smokers to last. Very heavy steel with a great finish . Well I took the plunge and ordered myself one from Bass Pro Shop. Assembly is a snap and though it's not advertised they come with a very nice cover. I know I'm gonna get years out of this smoker. 8 pound Boston Butt will be my first test tomorrow

This is easy to use

This is real easy to use. I was using a friends cheaper bullet style smoker, a different brand, for a few years and then decided to purchase this 18" smoker after buying a Weber gas grill and loving that. All the rave reviews that are everywhere are spot on. With The other smoker I was always monitoring the temperature and adding charcoal..just futzing with it. This one is literally fill it with charcoal, adjust the vents to find the right temperature, add your meat and then relax. I smoke two bone in turkey breasts(on the bottom rack), then on the top rack I put chicken breasts on until they are done..about an hour and a half, then I throw on 1 1/2" thick pork steaks or about three racks of ribs(STL style or baby back). I load it up and it's easy to adjust the temperature with the vents if needed because of the efficiency and the room for plenty of charcoal. The charcoal sits on top of a grate which helps a lot with air flow and temperature regulating. I use the donut method for arranging my charcoal. I use Kingsford blue charcoal. I have used other brands in the other smoker and kingsford blue worked the best so I stay with it. I have some of the lump hardwood stuff but haven't used it and probably won't because I'm happy and comfortable with kingsford. I think Weber discourages the use of the hardwood charcoal because it burns hotter and may damage the smoker. I use a chimney starter...l bought a Weber and am happy with it but used a different brand and it worked too. The Weber holds more charcoal and isn't rusty like the other brand.

I am 110% satisfied with my Weber 18" smoker. It is big but the 14" would have been too small. There are a lot of helpful articles about this smoker. It is very well made and with last me my lifetime.

You'll never go out for BBQ again!

Ribs, pork shoulders, whole turkeys/chickens, salmon, brisket, even wings. I have smoked them all in the 7 months I've owned my 18" WSM...all amazing. This is my first smoker, and I've got to say, I feel like I started with the best. The Smokey Mountain is so simple in design and easy to use, that it is almost "fool proof". I've even fired it up in 10 degree (F) weather (January in Ohio) and had it holding a steady 225 temperature for over 9 hours without adding fuel. The construction of the WSM is top notch, I feel like this will last 20+ years if I keep it covered and maintained. I spent a lot of time deliberating between the 18" and the 22" before ultimately decided on the 18". Unless you regularly smoke for 30 or more people, the 18" is plenty big. I could fit 2 shoulders on each of the 2 cooking grates (that's about 40 lbs of pork!!!), or a 15-20 lb turkey on each grate. I regularly throw 2 or 3 full baby back rib slabs "flat" on the top grate with no problem. Using a rib rack, I could easily fit 4 full racks plus a couple more half racks on the ends (per grate). If you're new to smoking (like me), I highly recommend this smoker. Every single thing I've thrown in this thing comes out amazing. I'm not kidding when I say you'll never go out for BBQ again, because what you make in this thing will blow them away. There are tons of YouTube videos featuring the WSM, and also a ton of websites, all giving great rub/recipe and smoking technique advice. I even see the Weber Smokey Mountain used in (and winning) big time BBQ competitions. Buy it, you'll be glad you did!!!

Awesome customer service!

I recently bought a smokey mountain grill to use for upcoming BBQ competitions this year since so many other teams I've seen on the circuit use them and touted them as one of the best they have ever used so I'm super excited to use it this year. The reason for this review is to talk about the customer service that Weber provides. As I mentioned I bought mine right after Christmas 2015 at Lowes. I got it home and didn't unpack it for a couple days. I finally unpackaged it and started putting it together and noticed that the screw was missing that holds the two plastic logo pieces together on the metal handle for the lid. I thought no biggie I can run to the hardware and get one. I got it all assembled and put the lid on and noticed it was warped like heck. It looked like something had laid on the side of the box and maybe dented it in during shipping. I contacted customer service immediately by email and got a response back within 15 min. The lady asked for my serial number off lid and I sent it to her and within 3 days I had a new lid. No questions asked or send me pictures so we can see what happened. BAM! It was taken care of. I thought the new lid would come with new handle pieces but it didn't and I emailed again. Within 2 days I had the pieces I needed with the screw I needed. I've had some great customer service from some great companies but I can't ever say that I've had any company treat me as great as what Weber did. No questions asked or send us back your damaged lid, they just took care of it and life went on. AWESOME!! Simply awesome is all I can say and I'll recommend Weber to everyone I run into on the BBQ circuit. Well done!! The way every customer should be taken care of no matter what company it is.

Sub zero smoking

I just got my wsm last week. Anxious to try it out, I bought 2 whole chickens.

Saturday it was 20f outside. I filled with Kingsford original two cups of soaked wood chips, filled the water pan half full, and dumped a full chimney before putting a chicken on. Each hour I checked dial temp. Partially closed the lower vents and it held 225 for 4 hours.

Sunday it was 0f to -5f outside. Same set up but used 3 chunks of Apple and filled the water pan with boiling water. Chicken on lower rack breast side up and salmon on the top rack with potatoes. Hovered at 180f for a short time but then with full open vents, reached 225 on the dial. Checked dial every hour, closed one vent slightly. Held temp for 4 hours! Absolutely the best smoked salmon I have ever had, moist perfectly cooked 165-180f chicken.

I love this smoker already, so easy to use

SMOKEY MOUNTAIN SMOKER 18.5 INCH

I had done a lot of reviews with a limited budget being a concern. I chose the 18.5 inch Smokey Mountain and love it. I build a portable shelter lined with reflectix insulation in which the smoker fits with clearance on all sides. I purchased a second lower cooking rack from Weber and made four legs out of stainless steel bolts which adds a third level for added capacity when doing ribs. I have cooked approximately 18 or so pork butts, 30 or so racks of baby back ribs (2-1-1 method), and one American Kobe beef ribeye roast. All have turned out exceptional. So exceptional that I no longer enjoy eating pulled pork or BBQ ribs at a restaurant. I'm so hooked on the Weber smoker that my friends and co-workers think I need counseling and possibly medication (it is all I talk about). Thing is, those that have eaten the meats off of the smoker love it and think I should compete. I even purchased a large plastic tub to wash the smoker parts in to prevent buildup (if buildup is left inside the smoker it causes black flaking). I use a Maverick temp monitoring system and just purchased a PartyQ which I have not used yet. I would rate the Smokey Mountain higher but the rating system only lets you go so high. Weber, thank you for such a wonderful smoker.

Changed My Way of Cooking

I received this as a Father's Day present in 2014. The first use was intimidating, but it has change the way I prefer my cooking! I'm still trying to perfect smoking fish (good flavor, but it is never as moist as my grilled fish), but I get nothing but raves about my ribs, leg of lamb, chicken and even the Thanksgiving turkey. I've even developed a smoked veggie sauce for Tex-Mex style dishes that also makes a stand-alone veggie burrito.

My only complaint is the inside main "barrel" looks like the finish is starting to flake. I'm going to keep an eye on it and see if it gets worse.

Don't be afraid to try different woods in the smoker, but I've learned that the chunks work best. two must have accessories are the Chimney Charcoal Starter and the Basic Rib Holder. That last item doubles to hold a roast or poultry, yes, even that turkey!

Weber kettle and smoker enthusiast

I've owned the kettle for about a year now and it performs amazingly well. My brother bought this smoker on a whim and we had been so pleased I wanted on for myself. I bought a 10 yr old used 18'' WSM and although a slightly different in water pan and door design it produces just as good as his brand new one without some of the extras the newer models offer. This smoker holds temp like a champ. Effortless, fun to experiment with, and an all out joy to own. Thanks Weber and look into producing a huge version 36 inches plus because I can't get enough meat after using this.

Where have you been all my life?

I'm a long-time Weber grill fan. I've owned kettle grills and gas grills. Because we were military, and moves and locations are hard on equipment, I've been through a few. As for smokers, I used a small upright "R2D2" smoker from another company for years. I got fair results, but it needed constant attention and burned large amounts of charcoal. Wood chunks used for smoking were used up in less than an hour. The quality of the food was variable, since heat control was nigh impossible. Honestly, I got better results setting up my Weber kettle grill for smoking.

I'd been eyeing the Smokey Mountain Cookers for years. I recently retired from the military and decided to get myself a gift. Setup was easy. The quality of materials is excellent (as has always been my experience with Weber grills). I decided to smoke a few racks of ribs for my in-laws for the first run.

Temperature control was easy. It settled right into the desired range with no trouble. Instead of having to constantly shovel in charcoal every hour, this thing held temperature over until I closed the dampers over 7 hours later. The ribs were superb, and since the charcoal and grilling chunks were still going strong when they were done, I smoked some sausage for a couple of hours just to see how that would do (turned out great).

This thing is a thermodynamic marvel. I didn't add a single briquette in over 7 hours, and it held temperature like a champ. The chunks of apple wood didn't need replenishing either.
