Pork

  • Completed step 3–4 kg bone-in pork rib roast
  • Completed step 2 tbsp olive oil

Cider Brine

  • Completed step 1.5 L apple cider
  • Completed step 1 L water
  • Completed step 80 g coarse salt
  • Completed step 60 g brown sugar
  • Completed step 2 bay leaves
  • Completed step 1 tbsp black peppercorns
  • Completed step 2 sprigs rosemary
  • Completed step 2 sprigs thyme

Roasted Apples

  • Completed step 4 apples, quartered
  • Completed step 2 onions, cut into wedges
  • Completed step 1 tbsp olive oil
  • Completed step Salt & pepper

Instructions

A classic pork rib roast gently cooked in cider and aromatics, served with roasted apples and onions. Juicy, aromatic, and perfectly suited to low-and-slow barbecue cooking. 

    IN THE KITCHEN:

  • Combine all brine ingredients and stir until dissolved.
  • Submerge pork in brine and refrigerate 8–12 hours.
  • Remove pork from brine and pat dry.
  • Lightly oil pork and season with salt and pepper.
  • Remove pork from fridge 1 hour before cooking.
  • Prepare apples and onions.
  • AT THE GRILL / BARBECUE:

  • Prepare Weber BBQ for indirect heat, 170–180 °C.
  • Preheat grill for 15 minutes with lid closed.
  • Place pork rib roast over indirect heat, bone-side down.
  • Insert Weber Connect probe into centre of roast.
  • Roast with lid closed until internal temperature reaches 60 °C.
  • Add apples and onions to a roasting tray and place beside pork.
  • Continue cooking until pork reaches target temperature.
  • TO SERVE:

  • Rest pork loosely covered
  • Slice between bones
  • Serve with roasted apples and onions
  • Spoon pan juices over pork
