In a large mixing bowl, weigh the flour, sugar, baking powder and salt.
In another bowl, beat the eggs and mix in the milk, melted butter and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.
AT THE GRILL:
Preheat the griddle for 10 mins. on low heat.
Lightly grease the griddle with butter.
Pour a large ladle of pancake batter onto the griddle to form pancakes about 20 cm in diameter.
Cook for 2-3 mins until bubbles form on the surface, then flip and cook for another 1-2 mins until golden brown.
Repeat with the remaining batter, keeping cooked pancakes warm.
Stack the pancakes into a tower, spreading a generous layer of cream, marshmallows and chocolate sauce between each pancake.
Dust the cake with icing sugar and serve.
