Hot Honey Pizza

For the Pizza

  • Completed step 4 x Neapolitan pizza dough balls (250g each)
  • Completed step 250g pizza tomato sauce
  • Completed step 300g fior di latte or mozzarella, torn
  • Completed step 120g pepperoni or spicy salami
  • Completed step 50g Parmesan, finely grated
  • Completed step Fresh basil leaves

For the Hot Honey

  • Completed step 120ml runny honey
  • Completed step 1 tsp chilli flakes
  • Completed step 1 tsp hot sauce
  • Completed step 1 tsp apple cider vinegar

To Finish

  • Completed step Extra chilli flakes (optional)

Instructions

A crisp, blistered Neapolitan-style pizza topped with rich tomato sauce, melted mozzarella and spicy pepperoni, finished with a sweet and fiery hot honey drizzle. The perfect balance of heat, sweetness and smoky barbecue flavour.

    IN THE KITCHEN:

  • Prepare the hot honey by combining the honey, chilli flakes, hot sauce and apple cider vinegar in a small saucepan. Warm gently for 2–3 minutes, stirring occasionally. Set aside to infuse.
  • Remove the pizza dough from the fridge at least 1 hour before cooking to come to room temperature.
  • Lightly flour the work surface and stretch each dough ball into a round pizza base, approximately 10–12 inches wide.
  • Spread a thin layer of tomato sauce over each pizza, leaving a small border around the edge.
  • Top with torn mozzarella and pepperoni.
  • AT THE GRILL/BARBECUE:

  • Prepare the grill for high heat cooking at 300–350°C. If using a charcoal barbecue, light 1 chimney starter of Weber briquettes. Preheat the Weber Crafted Pizza Stone for at least 15–20 minutes.
  • Carefully transfer the pizza onto the hot pizza stone using a lightly floured peel.
  • Bake for 6–8 minutes, rotating halfway through cooking if required, until the crust is blistered and golden and the cheese is bubbling.
  • Remove from the barbecue and immediately drizzle generously with the hot honey.
  • Finish with grated Parmesan, fresh basil and extra chilli flakes if desired.
  • Slice and serve immediately.
  • Weber Tip: Drizzle the hot honey over the pizza just after cooking while the cheese is still bubbling hot. The warmth helps the sweet heat spread across every bite.
