Honey Joy Poporn Crunch
  • ½ cup caster sugar
  • 120 grams butter
  • ⅓ cup honey
  • 3 slices of brioche (or brioche buns, halved)
  • 2 cups cornflakes
  • 3 cups lightly salted popcorn

Instructions

A childhood classic has a fun makeover. Chewy caramelised brioche topped with a crunchy, honeyed cornflake and popcorn mixture.
  • Prepare the barbecue for direct cooking over medium heat (180°C-230°C).

  • Prepare your barbecue for direct cooking over medium heat (210°C-240°C). If you are using a Weber Pulse, preheat your barbecue with the lid closed and your control knob(s) on high for 15 to 20 minutes, or until the barbecue reaches 290°C.
  • Add the caster sugar, butter and honey to a small Weber Q Ware Frying Pan.
  • Once your barbecue has preheated, place the frying pan onto the cooking grill over direct medium heat, with the lid closed, until the mixture has melted and become foamy, approximately 4 minutes, stirring once or twice. Remove the pan from the heat. Prepare the barbecue for indirect cooking over medium-low heat (170°C-190°C).
  • Once your barbecue has preheated, place the frying pan onto the cooking grill over direct medium heat, with the lid closed, until the mixture has melted and become foamy, approximately 4 minutes, stirring once or twice. Remove the pan from the heat. Prepare the barbecue for indirect cooking over medium-low heat (baking setting- 170°C-190°C). Set up your barbecue with a convection tray and a roasting trivet.
  • Once your barbecue has preheated, brush the cooking grills clean with a wire brush. If you are using a Weber Pulse™ turn the control knob(s) to medium (210°C-240°C). Place the frying pan onto the cooking grill over direct medium heat, with the lid closed, until the mixture has melted and become foamy, approximately 4 minutes, stirring once or twice. Remove the pan from the heat. To prepare your Pulse for baking, turn the control knob(s) to one notch less than medium (190°C-210°C).
  • Pour approximately 2 tablespoons of the melted honey mixture into a small dish and set aside. In a large bowl, add the cornflakes and salted popcorn. Pour the remaining melted honey mix from the pan over the cornflake mix, stir to coat.
  • Place two 10cm wide strips of baking paper in the pan, lengthwise and crosswise to help lift the slice out once it has baked. Pour the reserved 2 tablespoons of the melted honey into the base of the pan and swirl the pan for the honey mix to coat the base. Lay the slices of brioche in a single layer in the bottom of the pan (or if using buns, lay the cut side down). Pour the popcorn mix into the pan, pressing it gently to compact the mixture.
  • Bake the slice over indirect medium-low heat, with the lid closed, until the top is golden, about 25 to 35 minutes.

    (Frying Pan Only) Place the frying pan onto the centre of the cooking grill and bake the slice over indirect medium-low heat, with the lid closed, until the top is golden, about 25 to 35 minutes.
  • Once cooked, remove the slice from the barbecue and leave to cool completely in the pan. Lift the slice out of the pan, you may need to use a silicone spatula to help manipulate the slice out. Remove the baking paper. Slice into squares and serve.
