This is our absolute FAVOURITE way to grill fish- you get perfectly cooked, flaky, succulent fish that doesn't stick to your grills!
Rolling these Red Snapper fillets into Pinwheels increase the thickness of the fish, so you can cook it longer, resulting in deep caramelised grill marks. The fish releases easily from the grill, there's less risk of overcooking plus the meat stays tender and juicy. You can easily customise the flavours that you include in this dish, but ingredients such as citrus, crisp fennel, radish and dill are great partners.
