Prepare the marinade: In a pestle and mortar, grind the garlic, thyme leaves, brown sugar, salt, and pepper into an even paste.
Stir in the mustard, lemon juice, zest, honey, and olive oil until well combined.
Place the chicken strips into a resealable food bag, spoon in the marinade, and ensure the chicken is fully coated. Marinate for 30 minutes.
Thread the chicken, courgette, red onion, and red pepper onto skewers.
At the barbecue:
Preheat the Weber Traveler to medium heat (180-220°C) and allow it to heat up for 5 minutes with the lid closed.
Lightly oil the grates, then place the kebabs directly onto the grill.
Grill with the lid closed for 12-15 minutes, turning every 5 minutes, until the chicken is fully cooked and slightly caramelized.
Remove from the grill and garnish with freshly chopped mint before serving.
