Use a full-bodied red wine like Primitivo or Syrah for maximum flavour.
To increase smokiness, preheat the smoker box for 10 minutes before placing the Dutch Oven on the grill.
IN THE KITCHEN:
Stud the Orange:
Slice one orange in half. Place it flat side down and press the cloves into the skin side to make a studded pomander.
Combine the ingredients in the Weber GBS Dutch Oven, and add Wine, Clove-studded orange, Ground cinnamon, Cinnamon sticks, Star anise, Brown sugar and Cointreau.
AT THE BARBECUE:
Setup for Direct Heat:
Prepare your BBQ for direct heat, targeting 220–260 °C.
If using charcoal, light ½ Weber® Rapidfire Chimney Starter of briquettes. Wood cips and spices can be added directly to coals so there is no need for a smoker box.
If using Gas or Electric Grills Add Smoker Box:
Place a Weber Smoker Box directly over the heat source.
Inside the box, add a blend of spices and fruit wood:
o A few small handful of fruit wood chips (e.g. apple, cherry)
o A mix of whole cinnamon sticks, star anise, cardamom pods, and cloves
o Only add the wine once the box is smoking.
Simmer the Wine:
Place the Dutch Oven directly over the grill.
Gently heat until the wine reaches a steaming simmer — do not boil. Simmer for 8–10 minutes to infuse and warm through.
Serve:
Carefully ladle the wine into heatproof glasses or mugs. Garnish with a thin slice of orange and a cinnamon stick.
