Roasting on a Pellet Barbecue or Smoker
Roasting on your Weber wood pellet smoker or barbecue involves using settings suitable to create an indirect heat environment - ideal for roasting, baking, and low and slow cooking. This method surrounds the food with gentle, consistent heat, rather than the intense heat generated when placing food directly over the pellet fire.
Indirect cooking is recommended for foods that take longer than 20 minutes to cook through. This includes larger cuts of meat, like whole chickens, roasts, pizzas, and baked dishes. Typically, these foods do not require turning during the cooking process, allowing for even cooking throughout.
SET UP
Ensure your cooking grills are in position.
Fill the hopper with your desired flavoured Weber All-Natural Hardwood Pellets.
Turn your controller dial to the recommended cooking settings below.
Close the barbecue lid and wait until the barbecue reaches the set temperature.
Once the barbecue has preheated, brush the cooking grills clean with a stainless steel grill brush, and you’re ready to get cooking.
RECOMMENDED COOK SETTINGS
Roasting (190°C - 230°C)
Roasting on your Weber wood pellet smoker or barbecue delivers delicious, deep flavours and great colour. Elevate a Sunday night roast chicken with all the trimmings by adding a touch of smoky flavour, or create the most mouthwatering special occasion standing beef rib roast - complete with a rich, tasty crust.

Hot Roasting (230°C - 260°C)
Your Weber pellet smoker or barbecue can also reach the hot roasting temperatures used to crackle pork roasts for that golden, crunchy crackling - or even to crisp up your chicken wings with a hint of smoky flavour.
For crackling roast pork, start the cook at Indirect Medium-High Heat for 25-35 minutes, or until the skin has crackled. Then reduce the temperature to normal roasting (Indirect Medium Heat) to finish cooking through.

- Cooking on a wood pellet smoker or barbecue naturally infuses your food with a subtle smoky flavour. The intensity and character of that smoke will vary depending on the type of wood pellets you use. Experimenting with different pellet flavours is a great way to discover your favourite wood and food pairings - whether it's the sweetness of apple wood with pork or the bold richness of hickory with beef.
- For the best results when roasting meats and vegetables, we recommend placing your food directly on the cooking grill. Avoid using baking trays or roasting dishes, as cooking directly on the cooking grill allows your food to cook faster, become healthier by letting excess fats escape, and develop more flavour as the fats and juices create smoke. It’s also cleaner - no extra dishes to wash - and reduces the risk of flare-ups.
- When arranging food on your cooking grill, leave a small gap between each piece to allow air to circulate evenly around the food.
