In the kitchen:
For Ribeye steak
Bring steak to room temperature before grilling.
Season with salt and pepper generously on both sides.
Oil the steak before putting on the grill.
For Scallops
Remove scallops from chiller and season with salt, pepper and lemon zest.
Sprinkle oil on scallops before grilling.
At the barbecue:
Prepare the barbecue for direct heat, approx. 220°c. If using a charcoal barbecue, you need 3/4 chimney starter of lit briquettes.
Preheat grill to 220°c, then grill steak for 2 minutes each side with the lid down. remove from grill and rest for 5 minutes before serving.
