One Chicken, Seven Meals

Like many of you, I’m a busy working mom. Getting healthy, fresh meals on the table is important to me but between after school activities, homework and bath time I just don’t have the time or quite honestly, the energy to cook very often during the week.

To solve this problem I frequently make a rotisserie chicken on Sunday and use the meat for quick, easy meals throughout the week.

The best thing about grilling on the rotisserie is it’s a pretty hands-off process. Once the meat is seasoned, you just slide it on the rotisserie, put it on the grill and let it do its thing.

I season a whole chicken with salt and pepper, put it on the rotisserie over medium indirect heat and about an hour or so later I have juicy, tender chicken with crispy, golden skin. What doesn’t sound good about that?

Once the chicken has had a chance to rest I cut the meat off the bones and use it all week to make quick, healthy meals. Toss some of the chicken with cheese ravioli and pesto. Use it with whole-wheat tortillas, salsa and avocado slices for tacos.

I make salads with mixed greens, chicken, blue cheese, sliced red bell peppers and balsamic vinaigrette. The options are endless. Grill once and have healthy, delicious meals all week. That’s my kind of grilling.Â
