Grilling halloumi over the barbecue is something special, smoky on the outside, warm and perfectly melty within. The key is starting with a quality halloumi that holds its shape and delivers that signature salty bite. Piled onto crisp, flame-kissed crostini and finished with a drizzle of chilli-infused hot honey, every mouthful hits the mark, sweet, salty, crunchy, and gently spiced.

- Prep: Slice the halloumi into 7 mm-thick slices. Drizzle with approximately 3 teaspoons olive oil. Drizzle the remaining oil over the thinly sliced bread. Add the honey and chilli powder to a barbecue-safe frying pan.
- Grill: Once the barbecue has preheated, brush the cooking grills clean with a heatproof grill brush. Toast the sliced bread over direct medium-high heat, with the lid closed, for 1 minute per side, or until lightly toasted.
