Mushroom
  • Completed step 3 tablespoons Olive Oil
  • Completed step 1lb Mixed mushrooms (Cremini, Shitake, Portobello, King, Oyster), Chopped
  • Completed step 1 Garlic clove, minced
  • Completed step 4-5 sprigs Fresh thyme leaves, chopped
  • Completed step 3 Tbsp Balsamic vinegar
  • Completed step Goat cheese, crumbled
  • Completed step ½ tsp Salt & Pepper
  • Completed step Mixed Greens, baby spinach, arugula

Special Equipment

  • large cutting board, preferably with a well
  • Weber Gourmet BBQ System Wok

Instructions

  • Preheat the grill with the Weber Wok to 450-500F degrees using direct high heat. It’s important to get the wok as hot as the grill!
  • Add the olive oil and chopped mushrooms to the wok to begin stir frying the mushrooms.
  • This will help develop deep flavour and colour in the mushrooms while letting out excess moisture in the process. Season with salt and pepper.
  • After 5-6 minutes of searing the mushrooms, add the garlic and continue to cook for an additional minute followed by the fresh thyme.
  • Turn the heat down and add the balsamic vinegar to the mixture and stir.
  • Place the warm mushroom mixture over top of the greens and finish the dish by adding the crumbled goat cheese and grilled beef to the plate. Serve immediately and enjoy!
