Chicken Lo Mein
  • Completed step Fresh egg noodles, rinsed and drained
  • Completed step 2 chicken breasts, thinly sliced
  • Completed step 1 medium onion, sliced
  • Completed step 2 medium carrots, sliced
  • Completed step 3-4 cloves of garlic, minced
  • Completed step 1 tablespoon fresh ginger, grated
  • Completed step 3-4 heads of baby bok choi, sliced
  • Completed step 2 bell peppers, sliced
  • Completed step 1 cup bean sprouts
  • Completed step 3 scallions, sliced
  • Completed step 2 Tablespoons of cooking oil (needs to be a high smoke point)

SAUCE

  • Completed step 2 Tablespoons soy sauce
  • Completed step 1 Tablespoon dark soy sauce
  • Completed step 1 teaspoon sugar
  • Completed step 2 Tablespoons mirin or Chinese cooking wine
  • Completed step 2 teaspoons sesame oil
  • Completed step ¼ cup chicken / vegetable stock
  • Completed step 1 teaspoon cornstarch

Instructions

  • Rinse noodles well under cold water until the water runs clear (approx. 2-3 min) then strain dry.
  • Combine all the sauce ingredients.
  • Thinly slice the chicken breast (approx. 1/8th of an inch thick) and marinate in 2T of the sauce (at least 1-2 hours or overnight).
  • Prepare the grill for direct cooking over high heat (425° to 500°F) and pre-heat the Wok for 10 minutes.
  • Add oil and chicken to the hot wok. Cook the chicken until it is fully cooked then remove it and set aside.
  • Add oil and vegetables and fry for 2-4 minutes until slightly tender.
  • Add the noodles and the sauce to the pan and toss around for 1-2 minutes and add chicken back to the wok.
  • Once all is coated in the sauce remove the wok from the grill and garnish with green onions to serve.
