Mayo

  • Completed step 80 millilitres mayonnaise
  • Completed step 40 grams crumbled blue cheese
  • Completed step 2 teaspoons cider vinegar
  • Completed step 1 teaspoon hot pepper sauce
  • Completed step ½ rib celery, cut crosswise into thin slices

Patties

  • Completed step 1 pound minced chicken (92% lean, not all chicken breast)
  • Completed step 35 grams panko bread crumbs
  • Completed step 3 tablespoons hot pepper sauce
  • Completed step 2 tablespoons finely chopped fresh chives
  • Completed step ½ teaspoon kosher salt
 
  • Completed step Extra-virgin olive oil
  • Completed step 4 hamburger buns, split
  • Completed step 4 large leaves of iceberg lettuce, thinly sliced

Instructions

  • Combine the mayo ingredients, except the celery, and mash well with a fork. Stir in the celery. Cover and refrigerate until ready to use.
  • Mix the patty ingredients. Then gently form four patties of equal size, each about 2.5 centimetres thick. With your thumb or the back of a spoon, make a shallow indentation about 2.5 centimetres wide in the centre of the patties to prevent them doming during cooking. Refrigerate the patties until ready to grill.
  • Prepare the grill for direct cooking over medium heat (180°C to 230°C).
  • Brush the patties with oil and then grill over direct medium heat, with the lid closed, until fully cooked (74ºC), 8 to 10 minutes, turning once. During the last 30 seconds to 1 minute of grilling time, toast the buns, cut-side down, over direct heat.
