the Ingredients

  • 2 Red snapper Fillet
  • 8 Medium size prawns
  • 150 milliliters Chinese wine
  • 15 grams Ginger
  • ½ teaspoon Sugar
  • ½ teaspoon Salt
  • 10 grams Spring onions
  • 5 grams Red chilli
  • 4 teaspoons Light Soy Sauce


    In the kitchen:

  • 01 In a bowl, combine chinese wine, sugar, salt and light soy sauce.
  • 02 Line drip tray with parchment paper.
  • 03 Arrange seafood in parchment paper and pour marinate on top. Then sprinkle julienne ginger on top
  • 04 Wrap it up and grill direct.
  • 05 Lastly after grilling, sprinkle spring onion and chilli on top.
  • At the barbecue:

  • 01 Prepare the barbecue for indirect heat, approx. 220°C. If using a charcoal barbecue, you need 3/4 chimney starter of lit briquettes.
  • 02 Place seafood in parcel on direct heat and grill for 10 minutes at 220°C.
