Whoopie Pies

Original Recipe from the Weber Grill Academy Canada

Serves: 4-6 |  Prep time: 15 minutes | Grilling time: 15 minutes

Ingredients

  •     ½ cup unsalted butter, softened
  •     1 cup granulated sugar
  •     1 egg
  •     1 tsp vanilla
  •     1¾ cups all-purpose flour
  •     2/3 cup cocoa powder
  •     1½  tsp baking soda
  •     ½ tsp salt
  •     1 cup buttermilk

For the Filling:

  • 1½  cups marshmallow fluff
  • 1 cup butter
  • 1 cup powdered sugar
  • 1 tablespoon vanilla extract

Instructions

  1. Set up grill for indirect grilling at medium heat at 350°F
  2. In a large bowl, beat butter with sugar until light and fluffy, about 2 minutes. Beat in egg; beat in vanilla.
  3. In separate bowl, whisk together flour, cocoa, baking soda and salt; stir into butter mixture alternately with buttermilk, making 3 additions of flour mixture and 2 of buttermilk.
  4. Drop by heaping 2 tbsp (30 mL), about 3 inches (8 cm) apart, onto parchment paper–lined baking sheets to make 24 mounds.
  5. Place baking sheet on the indirect part of the grill and cook until tops slightly crack and spring back when lightly touched, 12 to 14 minutes. Let cool on pan on rack. 
  6. Cream together the butter, sugar and vanilla on medium speed until light and fluffy. Beat in marshmallow fluff until smooth. Once cookies have cooled, smear on one to two tablespoons of filling on the flat side of one cookie, and place another cookie to make a sandwich. Repeat process until all sandwiches are completed.
