Spooky Stuffed Peppers

INGREDIENTS
StuffingÂ
- 2 cups cooked quinoa
- 1 Tbsp vegetable oil
- 2 shallots, minced
- 2 tablespoon slivered almonds (toast them for more nutty flavour)
- 2 tablespoon green onions, chopped
- 1 tablespoon cilantro, chopped
- ½ avocado, diced
- Salt to taste
- Pepper to taste
- 1 teaspoon garlic powder
- 1/8 cup chopped olives *optional
- 1/8 cup diced sun-dried tomatoes *optional
- 4 Whole peppers (any colour)
- Olive oil
Instructions
- Brush cooking grates clean and preheat grill to 375F indirect heat.
- Mix with a spoon all the stuffing ingredients and set aside.
- Lay pepper on its side, and cut off the top part (stem part). Take a pairing knife and cut the middle out. This is the fun part, carve out eye, nose and mouth to give your peppers a Halloween flare.
- Fill the peppers with stuffing filling all the way to the top, make sure you are able to close the pepper with the top. Add a drizzle of olive oil to the top to prevent the stuffing from drying out. Place the pepper tops on, use a toothpick to help secure the top if needed.
- Put the peppers on a cooking tray and place them on the indirect part of the grill.
- After 30 minutes check for desired done-ess of peppers. Larger peppers may need more time. Serve immediately, enjoy!
