Spooky Stuffed Peppers

Serves 4 | Prep time: 20 mins | Grill Time: 30 - 40 minutes

 

INGREDIENTS

Stuffing 

  • 2 cups cooked quinoa
  • 1 Tbsp vegetable oil
  • 2 shallots, minced
  • 2 tablespoon slivered almonds (toast them for more nutty flavour)
  • 2 tablespoon green onions, chopped
  • 1 tablespoon cilantro, chopped
  • ½ avocado, diced
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon garlic powder
  • 1/8 cup chopped olives *optional
  • 1/8 cup diced sun-dried tomatoes *optional
  • 4 Whole peppers (any colour)
  • Olive oil


Instructions

  1. Brush cooking grates clean and preheat grill to 375F indirect heat.
  2. Mix with a spoon all the stuffing ingredients and set aside.
  3. Lay pepper on its side, and cut off the top part (stem part). Take a pairing knife and cut the middle  out. This is the fun part, carve out eye, nose and mouth to give your peppers a Halloween flare.
  4. Fill the peppers with stuffing filling all the way to the top, make sure you are able to close the pepper with the top. Add a drizzle of olive oil to the top to prevent the stuffing from drying out. Place the pepper tops on, use a toothpick to help secure the top if needed.
  5. Put the peppers on a cooking tray and place them on the indirect part of the grill.
  6. After 30 minutes check for desired done-ess of peppers. Larger peppers may need more time. Serve immediately, enjoy!
