the Ingredients

Wa R36
  • 5 slices thick-cut smoked bacon, cut into 1-inch pieces
  • 1 medium red onion, cut into thin half-moons
  • 1 pound brussels sprouts, trimmed at the root end and quartered
  • 6 garlic cloves, thinly sliced
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1½ teaspoon red wine vinegar

Special Equipment

  • Weber Gourmet BBQ System Cooking Grate
  • Weber Gourmet BBQ System Griddle

Instructions

  • 01 Prepare the grill for direct cooking over medium heat (350° to 450°F) using the Weber Gourmet BBQ System Cooking Grate. Set the Weber Gourmet BBQ System Griddle in the grate opening and preheat for 5 minutes.
  • 02 Cook the bacon on the griddle, with the lid closed, until it starts to soften, 3 to 4 minutes, stirring once or twice. Add the onions and cook, with the lid closed, until it starts to soften, 2 to 3 minutes, stirring occasionally. Add the brussels sprouts and garlic, season with salt and pepper, and cook, with the lid closed, until the brussels sprouts are crisp tender and the garlic is lightly browned, 8 to 13 minutes, stirring occasionally. Add the vinegar during the last minute of cooking. Serve warm.
