Here at Weber Grill Restaurants we created an upscale version of the classic burger, our “Farm” KettleBurger. It’s so-called because it’s stacked with cherry wood smoked bacon, fresh goat cheese, and a ground lamb and beef patty, all combined into one fantastic burger.
We have scaled down our house recipe that we featured in our restaurant earlier this year so you can re-create this in your own backyard. Make sure to purchase good quality, fresh ground beef and lamb for best results and always keep all of the ingredients well chilled until you are ready to cook it.
Once you have mastered this recipe, use it as a spring-board to create “backyard burgers” of your own! Or, if you want to enjoy this burger without the fuss of making it yourself, come in to any Weber Grill Restaurant and we will make it for you on one of our Ranch Kettles. Either way, burgers will always taste better when cooked on an authentic Weber Grill!
Makes: 4 burgers
Prep Time: About 30 minutes
Cook Time: 10-15 minutes
Burger press (or 4 ½” circle cookie cutter – about 1 inch tall)
1 pound ground beef (preferably ground chuck, 80%/20% mix – lean to fat)
1 pound ground lamb (shoulder or leg)
1 tsp Weber Gourmet Burger seasoning blend (or any type you prefer)
8 strips of smoked bacon (cooked until crisp and drained on paper towels)
4 ounces of fresh goat cheese (formed into 4 equal circles about 1/4” thick)
8 pieces of oil preserved tomato wedges (drained of oil)
4 large leaves of lettuce (washed and dried)
1. Mix the ground lamb and beef together in the mixing bowl until well combined. Separate the beef mix into 4 equal weight portions.
2. Use a burger press to shape the burgers. Then, put a “dimple” in the center of the patty with your thumb.
3. Repeat until all the patties have been shaped. Place in the refrigerator to chill down and set for at least 20 minutes.
4. Set the grill up for direct, medium heat cooking (about 350-400F). You will want to preheat for 10-15 minutes.
5. Once the grill is ready, season the burgers with the seasoning and place on the grill. Close the lid and cook for 4 minutes.
6. Flip the burgers over and cook for another 4-6 minutes (the internal temperature should be 155F).
7. Once the burgers are cooked, (but still on the grill) top each one with two pieces of bacon, then a goat cheese patty and finally two tomato pieces. Close the lid and cook for another minute to warm everything up. (the final temperature of the burgers should be about 165F).
8. Toast the buns, add the lettuce, top with the completed burger stacks and then the top bun.
