WHO YOU ARE AND WHAT DO YOU DO FOR WEBER?

I have been the meat business for over 30 years. I started as an apprentice meat cutter and worked my up to a variety of positions, and for the past nine years I’ve been the owner of my very own meat market! I write blogs for Weber using my expertise as a butcher to help spread more knowledge about meat, tips on buying, grilling, and smoking those fine cuts.

WHAT IS YOUR FAVORITE WEBER PRODUCT?

I have a Genesis, Performer, Master-Touch Kettle, 22” Smoky Mountain, Q1200, and of course a Smokey Joe. My favorite has to be my Performer; I love the ease of the gas starter, and the attached table. I have had mine for eight years now and always achieve great results.

FAVORITE THING TO GRILL?

A two-pound bone-in Ribeye… medium rare! This butcher loves his steak.

CHARCOAL OR GAS?

I have both, and love both. I use my Genesis more during the week when I’m pressed for time, and my Performer on the weekends, or days off from the shop.

WHAT'S YOUR BEST GRILLING ADVICE IN ONE SENTENCE?

It’s important to preheat your grill and scrape the grates clean; I’m also a big believer in keeping the entire grill clean.

HOW DID YOU GET STARTED WITH GRILLING?

My grilling really got kick started soon as I bought my meat market. The light bulb went off, I have some of the best meats you can buy, and felt that I needed to get more involved in grilling. I bought a Genesis, started grilling with great results, using ideas, recipes, and tips from Weber’s website. Then I bought my Performer and never looked back!
