Grocery List

Fresh Produce

  • 2 acorn squashes

Oil and Spices

  • 2 tsp extra-virgin olive oil
  • 0.75 tsp freshly ground black pepper
  • 0.5 tsp ground cinnamon
  • 0.25 tsp ground ginger
  • 1 tsp kosher salt

  • 1 tbsp maple syrup

  • 0.25 cup unsalted butter

  • 0.33 cup pecans

  • ¼ cup (½ stick) unsalted butter, softened
  • ⅓ cup chopped toasted pecans
  • 1 tablespoon maple syrup
  • ½ teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground ginger
  • ¼ teaspoon freshly ground black pepper

  • 2 acorn squashes, each 1½ to 2 pounds
  • 2 teaspoons extra-virgin olive oil
  • Kosher salt
  • Freshly ground black pepper

  1. Prepare the grill for indirect cooking over high heat (450° to 550°F).

  2. In a small bowl combine the butter ingredients. Mix well with a fork.

  3. With a large, heavy knife, cut the squashes in half lengthwise. Remove the seeds with a spoon. Lightly brush the exposed flesh with the oil and season with salt and pepper.

  4. Brush the cooking grates clean. Grill the squash halves, cut sides down, over indirect high heat, with the lid closed, until grill marks are clearly visible, about 30 minutes. Turn the squash halves cut sides up. Spread the exposed flesh with the pecan butter and continue grilling, with the lid closed, until the flesh is tender, 20 to 30 minutes more. Remove from the grill and serve warm.

Easy recipe, and great flavor. Recommend for fans of squash. Nice combination of sweet and savory. Will definitely make this again.

Be careful on the salt

I need to do this one again because i believe i seasoned the squash with too much kosher salt. The recipe doesn't state an amount of salt or pepper on the squash toward the end so use it sparingly and let the spiced pecan butter Deliver the flavor. The butter was delicious but the squash was saltier than i expected and overpowered the butter
