  • 0.125 oz fresh Italian parsley
  • 2 large yellow onions

  • 4 boneless rib eye steaks, each about 12 oz and 1" thick

  • 3 tbsp extra-virgin olive oil
  • 1 tsp freshly ground black pepper
  • 2.25 tsp kosher salt

Condiments

  • 1 tbsp balsamic vinegar

Dairy

  • 1 oz crumbled Gorgonzola cheese
  • 5 tbsp unsalted butter

Ingredients


  • 5 tablespoons unsalted butter, softened, divided
  • ¼ cup crumbled blue cheese, such as Gorgonzola, at room temperature
  • 2 tablespoons finely chopped fresh Italian parsley leaves
  • Kosher salt
  • Freshly ground black pepper
  • 4 boneless rib eye steaks, each about 12 ounces and 1 inch thick, trimmed of excess fat
  • Extra-virgin olive oil
  • 2 large yellow onions, thinly sliced (5 to 6 cups)
  • 1 tablespoon balsamic vinegar

Instructions

  1. In a small bowl using a fork, blend 4 tablespoons of the butter, the cheese, parsley, ¼ teaspoon salt, and ¼ teaspoon pepper. Set aside until ready to serve.

  2. Lightly brush the steaks on both sides with oil and season with 2 teaspoons salt and ¾ teaspoon pepper. Let stand at room temperature for 15 to 30 minutes before grilling.

  3. In a large skillet add 1 tablespoon oil and the remaining 1 tablespoon butter. Cook over medium heat until the butter is melted. Add the onions and 1 teaspoon salt and mix well. Cook until the onions soften and turn golden brown, stirring occasionally, about 20 minutes. Reduce the heat to low, add the vinegar and ¼ teaspoon pepper, and continue to cook until the onions are very tender, 20 to 30 minutes more, stirring frequently.

  4. Prepare the grill for direct cooking over high heat (450° to 550°F).

  5. Grill the steaks over direct high heat, with the lid closed, until cooked to your desired doneness, 6 to 8 minutes for medium rare, turning once or twice. Remove from the grill and let rest for 3 to 5 minutes. Serve the steaks warm with a spoonful of butter on top and the onions on the side.

Wow.....

Amazing. One of the best steaks i have had in a long time. I am normally the kind of person that eats his steak just the way it is, no sauce, seasoning, or anything special. Just salt and pepper. But i thought i would give it a try, and im glad i did.

A few things that i would suggest doing..

(1) Salt the steak heavy and let sit for at least 30 min. then wash the salt off. This will really tenderize the steak. Then proceed with the recipe

(2) Really watch your onions. its easy to burn them when making them this tender.. i burnt mine a tad, but the flavor was still great.

(3) LET YOUR MEAT SIT AFTER ITS COOKED. until it is down to around 115-110'

Again...amazing recipe. I will make this again!

Rib Eye with Bleu Cheese Butter

If you like the deep flavors of a rib eye, you need to try this. You can make ahead a fair amount and finish during a party. In fact, that's what i am going to be doing next month. Make the butter and onions before anyone gets here, I added orange bell pepper to the asparagus and used a lemon olive oil (easy to make). All done ahead of time. When guests arrive, we have the normal snacks and then I throw on the steaks. While they are resting I grill the peppers & asparagus Depending on the thickness of the asparagus, I may hold the asparagus a bit. Then heat up the onions a little, all hit the table at once with minimum time from me; so I get to enjoy the party as well. A keeper for sure,

Who needs a fancy steakhouse

Wonderful! My husband did the grilling and I made the blue cheese butter and onions ( I actually used shallots because that's what we had at home!)
Made onion soup mix potatoes as a side. So delicious!!

Unbelievably good!

I followed the recipe exactly. The flavors of the caramelized onions and blue cheese together is so well balanced. This is one of the best steaks that I have ever had!
