Longer the Soak The Better
These planks give amazing flavor to grilled fish, especially salmon. The plank is long and I use my large roasting pan to soak. Place a heavy wine or liquor bottle on top to keep the plank fully submerged. I find submerging for several hours really helps, although it can be done in less time. Followed the directions, set plank over heat for 5 minutes to allow the smoke to release. I season salmon using my favorite dry rub, other fish I season with sumac and pepper, always place thin lemon slices on top. I do like to lightly brush the fish with olive or grapeseed oil to prevent it from sticking to the plan. I find that I can use each plank 4-5 times. Because the bottom chars, I let it cook and then place it in a plastic baggie and store in my grill cabinet. These Weber planks are the best I have found. Thought they are large, the size is perfect for cooking a full fillet or 4 six-ounce center cuts. Petrale sole is amazing on the plank, fresh trout and catfish as well. This really makes grilling fish so easy and so flavorfull that I'll never cook fish on the grill any other way again! Guests have noticed the amazing flavor, not to mention the aroma while cooking.
