Christmas Steamed Pudding

Makes: 4-6
210gms Butter
100gms Brown sugar
4nos Egg
130gms Self raising flour
1nos Zest from orange
2tbsp Maple syrup
1pinch Salt
3tsp Baking powder
Recipe preparation
In the kitchen:
  • Cream butter and sugar till fluffy.
  • Then beat in eggs 1 at a time until combine.
  • Next, mix in flour, salt and baking powder.
  • At base of pudding mould, add in orange zest and maple syrup.
  • Then pour mixture on top pf maple syrup, wrap with a layer of cling film followed by a layer of aluminium foil. (make sure it is wrapped up tight)
  • Steam for 90 minutes at 100°C.
  • Once done, rest for 10 minutes before removing wrappers.
At the barbecue:
  • Prepare the barbecue for Indirect heat approx. 100°C. If using a charcoal barbecue, you need 1/2 a chimney starter of lit briquettes.
  • Preheat Grill for 20mins with lid down.
  • Place pudding into grill and Steam for 90 minutes at 100°C.
