Camarones a la Mexicana

Not everything that you grill has to be beef! I love to grill seafood for a simple fresh meal.  My mother used to cook “Camarones a la Mexicana” or for the English translation, “Mexican Shrimp”.  Usually they were only made for special occasions, but I loved them!  Plus since everything is better on the grill, I had make this recipe with a little twist; so this is my version of “Mexican Shrimp” on the Grill with a shot of mezcal.

Camarones a la Mexicana con Mezcal

Serves: 2

Prep time: 15 minutes

Grilling Time: 6 minutes

Special equipment: Weber Original Gourmet BBQ System Griddle

Ingredients

1 lb                   Medium shrimp, peeled

1 tablespoon   Unsalted butter

2 tablespoons Extra virgin olive oil

4 pieces           Medium garlic cloves, finely sliced

½ piece            Medium red onion, finely chopped

2 pieces           Plum tomatoes

2 pieces           Serrano peppers, finely sliced

1 dash              Sea salt

1 dash              Freshly ground black pepper

2 teaspoons    Dry oregano

4 ounces         Mezcal

                        Finely chopped cilantro leaves

Instructions

  • Prepare your grill for direct high heat (450°-550°F) and preheat your Weber Original Gourmet BBQ System Griddle for 5 minutes.
  • Put the butter and the oil into the griddle. As soon as the butter melts, put the garlic and let it cook for 30 seconds to a minute. Then put the onion, stir gently 2 or 3 times and close the lid for another minute. After (in this order) put the tomato, the serrano pepper, then the shrimps, season with salt, pepper and the oregano. Grill this for 4 minutes and turn the shrimp 1 or 2 times. Next, carefully pour the mezcal over the shrimp and close the lid for 2 minutes.
  • Remove the griddle from the grill and garnish with the cilantro leaves. Serve immediately with some toast bread if you desire.
