Prime Rib on the Summit Charcoal Grill

Prime Rib on the Summit Charcoal Grill is an incredibly rewarding dinner that is also really easy to prepare. Sure, I can walk 5 minutes down the road and order a slice of prime rib from a favorite local restaurant of mine, but why would I want to do that when I can grill my own in the backyard?

10-12 pound, 4-bone beef rib roast

½ cup fresh herbs, chopped (rosemary, thyme, marjoram)

Kosher salt

Freshly cracked black pepper

Olive oil

Coat the roast lightly with olive oil. Season generously with salt and pepper. Cover all over with the fresh herbs.

Prepare the grill for indirect medium-high heat (375-400 F).

Place the roast on the grill and lower the lid.

Grill for 2 ½ to 3 hours or until the internal temperature of the roast reaches 120-125 F for medium rare.

Remove the meat from the grill, loosely tent with aluminum foil and allow to rest for approximately 15 minutes.

Carve and serve.
